Because Michael just came home and we’re ordering Thai.  Yum.

I tried this two nights ago and I LOVED it.  Michael, not so much.  Oh well, can’t all be winners.

BETH’S EASIEST CHICKEN RECIPE EVER

1 1/2 cups Pace Picante Sauce
3 T. packed light brown sugar
1 T. Dijon Style Mustard
4 boneless/skinless chicken breasts halves
Pre heat oven to 400 degrees.
Put chicken in shallow baking dish.
Mix first three ingredients and pour over chicken.
Bake in oven for 20 minutes or until done.
Serve over rice.

So, first I have to thank those of you who have checked out the site and a special thanks to the ones who commented.  It means the world to me that people are willing to read what I have to say and then choose to say something back.  Now, on with business…

I’m about to make dinner and for those of you who know me even a little bit, you should know already that I hate cooking.  I think it’s boring, tedious, and way too much work for what I get out of it - typically a gray, bland pile of stuff that’s hardly edible.  There is, of course, the exception of those ready-to-make-out-of-the-box things like spaghetti (sauce in a jar, noodles from a box) and those lovely rice side dishes with the spices already added.  I can handle those and do quite well when I don’t overcook them or, for that matter, under cook them.  And before you ask, it is possible, I’ve done it.

Tonight I’m making my pretty standard tri-tip steak marinated in this great Polynesian sauce that we get at Sprouts.  That’s one of the better finds I’ve made there.  Truly yummy stuff even if it does have the additive of the devil, High Fructose Corn Syrup in it.  With that, I’ll make one of those great box-o-rice side dishes, a yellow curry rice.

Off to cook - anyone have any recipes they want to leave?  I’ll give them a try and let you all know how they went!

I love cats. I think they’re cute and wonderful and just about the most perfect animal in the world. Sadly, we can’t own one though because my husband, who also loves cats, is very allergic to them. We had two a few years ago, but had to give them up because he couldn’t function with all the fur flying day in and day out. It broke my heart to give them up, but it was worse seeing him miserable and all sneezy and sinus-y. I often wonder what happened to sweet Betty and little Rufus. Here’s a picture for you all to enjoy… click on it to take in all the fuzzy glory.

Aw, aren’t they adorable? They were less adorable at 5 am when they’d start meowing or when Rufus would drop a stink bomb in the litter that would kill a large rhino. Still, they were my babies and I loved them. Here’s to you, Betty and Rufus, where ever you are. I wish you lots of sunshiny naps and too many jingly toys to count.

I just went outside to take the trash out and I took my time. It’s so nice outside I wanted to relish every moment. Even the stench of the trash bin didn’t make me wince because it was just SO DARN NICE OUT THERE. This is the time of year when I get a little crazy about just how much I love the evening weather. Don’t get me wrong, the days are great when it’s in the 70’s and sunny, but the nights are just, well, magical. Yes, I used that horrible cheesy word, but it is! The breeze is blowing and it’s cool and crisp and I just want to run around the driveway with one of those streamers they use in gymnastics competitions to celebrate just how wonderful it is. Sigh. Bad visual, huh?

I better enjoy the nice weather now, though, because soon I’ll be back to sweating my way through summer. Ick.

Why this title?

The title you see above is not as depressing as it sounds. Sorry to disappoint. I’m actually a pretty up person most of the time. It’s actually the half idealistic-half realistic view with which I’ve come to view the world.

I’ve got a quote on the white board in our office that says “Failure is not falling down, but refusing to get up.” It’s a Chinese proverb that a friend emailed over to me since she and I share the obsessive and quite strange love of a good quote. This one stuck and it happened into my life at a time when it was very appropriate. I won’t go into gory details, but it really helped me remember that I wasn’t failing so much as I was simply falling as long as I kept standing back up.

So, that’s why I’m here back on my feet. Gaining the strength to fall back down again. I used to believe that true success was never.falling.down.ever. So wrong. Everyone falls down and the truly strong people muster the strength to get back up, dust themselves off, recover from their injuries and grow stronger and more flexible from those injuries. That’s true success - bouncing back. And, how do you bounce back unless you fall down? You can’t. Realizing this was very freeing. So now I don’t concentrate on being perfect, always playing it safe so I won’t topple over and get hurt. Now, I am ready to take risks, get hurt, stumble and just plain biff it every once in a while so I can stand back up and face the day again stronger, smarter, and with cool scars to show it.
